“Crack” Broccolli
Broccoli has never tasted so good! My kids have a hankering for this delicious side more than any other, and it is definitely one of the staples for myself and my husband. Super quick and easy, reheats beautiful, so meal prep is a breeze!
"Crack" Broccoli
Equipment
- 1 18"x13" Baking Sheet
- Aluminum Foil
Ingredients
- 3 crowns Broccoli Rinsed and stems removed
- 2 tbsp Coconut Oil
- 1 tbsp Everything But the Bagel Seasoning
Instructions
- Preheat oven to 425°
- Line baking sheet with aluminum foil
- Rinse broccoli and allow to dry in colander for approximately 5 minutes
- Chop broccoli into 1-2" florets
- Spread broccoli evenly on aluminum foil and spoon coconut oil into clumps over broccoli (it is solid at room temperature, but will dissolve quickly in the oven)
- Sprinkle Everything But the Bagel seasoning evenly over broccoli
- Place baking sheet in over for 3 minutes, then toss to coat broccoli with oil and seasonings
- Bake in oven for 15 additional minutes
- Remove from oven and toss once more before serving
Notes
- Serve under your favorite protein or eat broccoli by itself as a snack
- Store unused broccoli in the refrigerator for 3-4 days to use as meal prep
- To reheat, simply spread desired serving in a single row on a microwavable safe plate and heat in microwave for 1 minute
- Leftover broccoli is DELICIOUS in the mornings reheated and topped with two over-easy eggs
